  • Remove the skin and bones.

  • If Using Chicken Breasts:
  • Season the breasts with salt, pepper, and a pinch of thyme.
  • In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Sear the chicken breasts for about 6-7 minutes on each side until they are completely cooked through.
  • Remove the chicken, let it cool slightly, and then cut into bite-size pieces.

Step 2: Sauté Vegetables

  • Using the same pot, lower the heat to a medium setting.
  • Place the chopped onion (if desired), garlic, carrots, and celery into the pot.
  • Sauté for 5-7 minutes until the vegetables become tender.
  • Optionally, add 1 tablespoon of butter to enhance the flavor and creaminess.

Step 3: Create the Broth

  • Add 4 cups of chicken broth to the pot.
  • Mix in the can of cream of chicken soup and, if desired, the cream of mushroom soup.
  • Add the bay leaf and dried thyme.

Step 4: Add Noodles and Chicken
